Strawberry Banana Muffin Recipe!

I'm going to cut right to it and give you the recipe before I start the blog to make it easier for those who don't want to read or see photos so there's no scrolling for four years to see my recipe lol!
Ingredients: 2 ripe bananas 1 cup diced strawberries (divided in half) ¼ cup coconut oil (may substitute vegetable oil) ¼ cup unsalted butter melted and cooled ½ cup sugar ½ cup brown sugar tightly packed 2 large eggs room temperature 1 Tablespoon vanilla extract 1 Tablespoon strawberry jam
¼ cup buttermilk room temperature 2 cups all-purpose flour 1 ½ teaspoons baking powder ½ teaspoon baking soda ½ teaspoon salt
Dash or two of Cinnamon (if desired)
Instructions: ▪Preheat oven to 425F and line a muffin tin with paper liners ▪Place bananas and 1/2 of the diced strawberries in a large bowl and use a fork or a potato masher to mash them (should be well-mashed) ▪Add oil, melted butter, the strawberry jam, sugars, eggs, vanilla extract and buttermilk and stir well. Set aside.
▪In a separate bowl, whisk together your dry ingredients - flour, baking powder, baking soda, salt and dash or two of cinnamon if desired. ▪Add dry ingredients to your wet batter and gently fold in until ingredients are just combined (don't over-mix the batter!) ▪Stir in other half of diced strawberries. ▪ filling each liner 3/4 of the way full.
Set aside and prepare your Streusel topping.
Streusel Topping:(optional) ▪Combine 1/2 cup flour, 1/2 cup brown sugar in a bowl, Using a fork or a pastry cutter, cut in half a stick of cold butter until the butter is well-worked in and your mixture resembles coarse crumbs. ▪Sprinkle streusel topping over each muffin. ▪Bake muffins on 425F for 8 minutes and then reduce the oven temperature to 350
(DO NOT open the oven door or remove the muffins) and bake another 7-8 minutes on 350F. ▪Use a toothpick to check done-ness should be dry and crummy, not wet! ▪Allow to cool and enjoy!
PS: You can use whatever fruit you have on hand with this recipe! I would just suggest using the same type of jam as you do fruit, or you can just leave out the jam entirely, I just like the extra sweetness ;)
For those who would like visual steps they are below!!

I personally like to take everything out and get everything ready before I start mixing anything. I find it makes baking more relaxing because you can just pour and mix, no running around searching for everything as you need it.
It also makes the whole process go by WAY quicker so you can eat what your making a lot sooner, and that should be enough incentive to prepare first! :)

The first step is to smash your bananas and half of the diced strawberries together until a chunky apple sauce consistency. Its not very pretty, but so important to squish all the juices out of the fruit so your muffins have as much fruit flavor as possible!

Next you want to add your melted butter, coconut oil and jam and mix it in well!
Make sure your butter is has cooled to room temp.

Then add your sugars and mix them in thoroughly!
you can use a standard mixer but this is such an easy recipe I just always do it by hand.

Next, add your vanilla and eggs.
I actually recommend whisking your eggs separately first, then mix them in. It just makes it easier to incorporate them into the batter.
Once mixed, set that aside and work on your dry ingredients.

In a separate bowl, whisk all dry ingredients together, you can also sift them into the bowl, but once again, I don't mind doing this recipe by hand, plus less clean up and I'm all about that! lol!
Once you mix your dry ingredients together you want to add them to your wet ingredients and FOLD them together with a rubber spatula until just mixed. You don't want to overmix your batter or it will make your muffin tough, so don't worry about little pockets of flour that didn't mix in all they way, those pockets will make your muffins fluffy and moist.

Now, all the other half of your strawberries and nuts if you desire! :) just barely fold those in as well!

Now just fill your baking cups 3/4 of the way up to leave room for them to puff up and also room for the streusel if you want to add that on the top as well!
I just use a measuring cup to fill my muffins cups, but you can use an ice cream scoop or spoon whatever you got will work.

Streusel topping is easy! mix 1/2 cup of All purpose Flour, 1/2 Cup brown sugar and half a stick of cold butter!

Using a pastry cutter or a fork, you want to smash and mix the cold butter with the dry ingredients until the butter is the size of peas and is crumby and then its done!

Now spoon your streusel topping on each muffin, you really can add as much as you want!
Then all that's left is to bake you muffins!
bake them at 425f for 8 minutes then lower the temp to 350f for another 7-8minutes.
make sure to not open the oven door during this temp change.
once timer goes off check doneness with a toothpick inserted in the center of the muffin. If it comes out clean or with a bit of dry crumbs on it, its do! No wet batter! if you do see wet batter bake for another minute or two.

Once baked, tops will be golden brown! allow to cool before serving
if they aren't eaten within 2 days I suggest keeping them in the fridge!
